HEALTHY EASY SNACK RECIPE: SWEET POTATO EGG BITES

One of my favourite healthy snacks to eat are these super tasty Sweet Potato Egg Bites, perfect for those mid-afternoon cravings but packed full of goodness its amazing what you can do with a bit of veg and egg whites!

Prep time: 10 minutes
Baking time: 25 minutes
Portions: 6 bites

Ingredients:
1x large sweet potato
18x egg whites (I usually get the carton ones)
Cherry tomatoes
Mushrooms
Red peppers
Yellow peppers
Oregano
Mixed herbs
Black pepper
Fry Light

Utensils:
6x muffin baking tin
Cheese grater
Knife
Chopping board

Start by popping the oven on 180 degrees to preheat. Next spray the muffin tin with 1 kcal Fry Light ready for the mixture. Grate the full sweet potato using a cheese greater until completely shredded, now pack this into the muffin slots to form the base. Make sure you push down firmly so the mixture binds together in the oven. Place on the middle shelf in the oven for around 10 minutes.

Whilst the base is cooking, begin to finely chop all the veg.

Once the potato base looks baked, add in the chopped veg, splitting them out into the different slots. I usually do two for each type of veg, but Im sure theyd taste great if you wanted to combine them as well.

Once the slots are stuffed, pour the egg whites over the top until completely covered. Sprinkle with mixed herbs, black pepper and Oregano. Pop back in the oven again for a further 15 minutes until the egg whites look completely cooked.

And there you have it, three sets of snacks to last you a few days. I usually eat these two at a time as a mid-afternoon snack with spinach for an added bonus of iron!

THINGS TO DO IN GLASGOW: BLOGGERS GUIDE

After another successful blogger event, this time in Glasgow, I thought we'd make the most out of it and do a little bit of sight seeing. The boyfriend has friends up in Scotland so he met me for another night on Scottish turf. Thanks to some serious help from Forever Yours Betty and Honey Pop Kiss, I was set with a jam-packed list of places to see and things to eat!

Places to eat Glasgow: Singl End Cafe

Out of all the places we eat, I'd highly suggest visiting Singl End Cafe. Set downstairs in a quirky little side of town, the venue is quirky and extremely vintage-esque. From the menu I ordered a King Prawn & Chorizo Open Sandwich from the specials menu, as you can see from the picture it was DIVINE - like if we had a Singl End in Manchester, it would be far be my fave spot. Marcel opted for a Steak Sandwhich with Leek and Bacon soup - equally as delicious as mine.

Places to stay in Glasgow: Citizen M

Now I know this is not my first time I've stayed at the Citizen M, you may remember my review here from a few years back, but when I'm staying in a new city I usually like to branch out and try new places but as we were only there for one extra night I felt it was easier just to book somewhere I've stayed before - especially as the service and facilities last time were incredible. For a one night stay it cost around 85 with members discount and it was worth every penny and more. Citizen M have hotels in various spots such as Paris, New York, Amsterdam and a couple in London, yes there small but they have everything you need for a short stay.

Places to eat in Glasgow: Roaster's Deli

Close to the city centre, we checked out Roaster's after a good scan on Instagram before we headed to Glasgow. The cute venue would of been a great spot for a hungover breakfast, with breakfast burgers as an option I'm sure you'd be satisfied! I went for the salmon and eggs, which if I'm honest I was a little disappointed at the portion size after a manic event the night before and a morning working from the hotel room... I mean comer on guys, how much more effort is a second piece of toast haha! Despite the lack of (much needed) carbs, the breakfast was still delicious. Maybe it's my own fault for not going for the breakfast burger after all!

Places to visit in Glasgow: The Glasgow School of Art

The Glasgow School of Art was another recommendation that came from Forever Yours Betty and Honey Pop Kiss. Just a stones throw away from Singl End Cafe, the School of Art has an exhibition space that showcases its own talent. You can check out up and coming artists at no charge at all, taking in what's to come from the next generation of talent.

Places to eat in Glasgow: Prep Fitness Kitchen

After another good Instagram stalk, I came across the Prep Fitness Kitchen which looked very similar to some of the spots we check out in Manchester. With the whole 'clean eating' vibe going on, we thought we'd head there for breakfast on our last day. I opted for the Banana and Cocoa Protein Pancakes whilst Marcel went for the Bacon & Maple Syrup stack. Deliciously healthy and tasty, there was nothing to fault with this little Insta find - thank god for hashtags haha

Places to visit in Glasgow: The Botanical Gardens

Now if you read up on my Where To Go In Copenhagen post, you'll know I have a thing for a Botanical Garden. Well guess what... This one was ALSO SHUT! Honestly my luck with these kind of places is crap! It's the second time I've attempted to visit a beautiful flower sanctuary and I've got there slightly after it's closed. Anyway, we walked the grounds which I'm sure was easily as lovely and visited what would of been the rose garden (if it was in bloom). Definitely give this place a try if you're in Glasgow... Maybe tag me in your pictures so I actually get to see what it looks like too haha!

Places to eat in Glasgow: Bread Meats Burger

The current winners of Scotland's Best Burger venue in 2016, you can find Bread Meats Burger places across Glasgow; including the City Centre, West End and even one in Edinburgh. Established in 2012, the burger joints are like a bistro Five Guys. Whereby you can takeout and sit in the relax eating your chosen burger and mouth-watering fries. Marcel is quite the burger conasur , if he's having a cheat meal then he definitely makes it count, so take his word for it when he said it was delicious!

Places to eat in Glasgow: Tantrum Doughnuts

Another Instagram find was Tantrum Doughnuts, and when you'd strategically swapped your Sunday cheat day to be midweek, this was an opportunity I couldn't let slide! Known for their crazy take on doughnuts - including a bacon and crackling flavoured, each creation is made my hand by REAL people. Non of this machine rubbish or pre-made rubbish. We also ordered from Tantrum for our event catering, so make sure you give them a shout if you're after something tasty and unique.

SPRING WARDROBE REVAMP WITH DEBENHAMS

Spring is finally here so it's time to put away the leather pants and get out the culottes - yep that's really how it works for me! My first stop for Spring shopping had to be Debenhams, with the Studio by Preen collection, Nine by Savannah Miller, Warehouse and now Mango and Hobbs launching, you can get all your new season wardrobe essentials under one roof... Or on one site if you prefer shopping from the comfort of your own home.

The first piece I've picked up is this beaut Navy Tie Waist Culottes Jumpsuit by Warehouse, perfect for that day-to-night casual look with a pair of heeled boots and a leather, or you can dress is up with a simple hair up situation and a pair of strappy sandals - definitely a must-have for my Spring 17' wardrobe!

I also fell in love with this Studio By Preen Stripe Crop and Faith Embroidered Mules which looked incredible but I thought I'd hold out a little bit until the night's get a little warmer before splurging - I'm still wearing a coat most days in Manchester!

FIRST DAY OF SPRING WITH TWISTXTURN

The first day of Spring is here and by god have I been counting down the days! Like I'm so over Winter it's untrue. Stepping into Spring is like stepping into a new opportunity to remake your style - something I always like to experiment with when a new season comes around but still sticking to hints of my signature look if you know what I mean.

Discovering new brands is all part of the job as a blogger, and Twist X Turn actually found its way quite quickly in to my wardrobe - I mean what's not to love about feminine silhouettes, textured fabrics and monochromatic palettes? Here I've styled up the Black Frill Peplum Top available at Topshop with a pair of Black Silk Pleated Trousers, finished with my new Black Medium Handbag by Radley. Staying true to my obsession with all things black, but mixing up textures and styles with the help of this beaut new TXT piece, I was Spring ready in no time!
